How To Brew Chemex Coffee
Use a medium grind coffee, similar to the grind used in auto-drip coffee makers.
To brew with your Chemex:
- Open the filter and place it in the cone-shaped top of the Chemex. If you are using the pre-folded square filters, one side of the cone should have three layers and the other should have one. (see filters)
- Place 2 tablespoons per 6 oz cup of coffee into the filter.
- Boil filtered water on your stovetop. Once it reaches a boil, remove it from the heat and let it sit for 30 seconds.
- Pour just enough water over the coffee to wet the grounds. This allows the coffee to ÒbloomÓ with flavor before the filtering begins.
- After you wet the coffee, slowly pour water over the grinds being careful to keep the water level below the top of the filter. Keep a watchful eye on your filtering process so as not to let the coffee go dry during the brewing.
- Once your coffee is brewed, you can remove the filter and serve!
