How To Brew Chemex Coffee

Use a medium grind coffee, similar to the grind used in auto-drip coffee makers.

To brew with your Chemex:

  1. Open the filter and place it in the cone-shaped top of the Chemex. If you are using the pre-folded square filters, one side of the cone should have three layers and the other should have one. (see filters)

  2. Place 2 tablespoons per 6 oz cup of coffee into the filter.

  3. Boil filtered water on your stovetop. Once it reaches a boil, remove it from the heat and let it sit for 30 seconds.

  4. Pour just enough water over the coffee to wet the grounds. This allows the coffee to ÒbloomÓ with flavor before the filtering begins.

  5. After you wet the coffee, slowly pour water over the grinds being careful to keep the water level below the top of the filter. Keep a watchful eye on your filtering process so as not to let the coffee go dry during the brewing.

  6. Once your coffee is brewed, you can remove the filter and serve!
